Lentil Orzo Salad
- 1 1/2 cups orzo pasta
- 3/4 cup green lentils
- 1 cup red onion, small dice
- 1 cup zucchini, small dice
- 1/2 bunch parsley, washed and chopped fine
- 1 1/2 cups feta cheese, crumbled
- 1/4 cup olive oil
- 1 Tbsp lemon juice
- 1 Tbsp red wine vinegar
- 1 Tbsp honey
- 1 Tbsp garlic, minced
- 1 Tbsp dried oregano
- 2 1/4 tsp salt
- 1 1/2 tsp ground black pepper
Cook orzo in salted water until al dente, drain and shock with cold water. Simmer lentils until tender, drain and shock with cold water. Combine all ingredients in a bowl and mix well.
