Lime Scented Corn Tortillas
- 3 cups masa cornmeal
- 2-3 tsp salt
- 1/2 tsp cumin
- Zest of one large lemon
- 4 Tbsp vegetable oil
- 2 cups hot water
- All purpose flour; as needed for kneading
In a bowl, combine first four ingredients. Slowly, using a wooden spoon, mix in vegetable oil and then begin to add water, mixing gently until dough comes together into a ball. Turn out onto a well floured workspace and knead for 5-10 minutes until dough is smooth and elastic. Wrap ball in saran wrap and let rest for at least 30 minutes or overnight. Break ball into about 16 pieces and roll into balls gently. Using a rolling pin or a tortilla press flatten to desired thickness. Heat a skillet to high heat until it smokes. Add tortillas one by one and cook on each side until bubbles brown. Store in foil until you are ready to eat.
