Roasted Sweet Potato Wedges

  • 6 large sweet potatoes,  cut into wedges
  • 1/4 cup canola oil
  • 1 Tbs salt
  • 2 gloves garlic, minced
  • 1 tsp pepper

Preheat oven to 350 F. In a large bowl combine all ingredients and toss to evenly coat. Arrange on a sheet try in a single layer and roast until golden brown and tender, about 18 minutes.
