Salted Toffee Blondies
- 1 1/2 sticks unsalted butter
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 3/4 teaspoon kosher salt
- 1 1/2 cups light brown sugar
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 1 cup milk chocolate chips
- 1/4 cup plus 2 tablespoons toffee chips
Preheat the oven to 350°F. In a medium saucepan, melt the butter. Add both sugars and whisk constantly until the sugar is dissolved, about 5 minutes. Transfer the mixture to a large bowl. Set aside to allow to cool slightly. In a medium mixing bowl, whisk together the flour mix, baking powder and salt. Set aside. In the large bowl with the butter mixture, whisk in the vanilla extract and eggs until thoroughly combined. Add the flour mixture and whisk until combined. Fold toffee chips into the batter. Pour into greased 9 x 9-inch baking pan. Bake for 24 to 27 minutes. Do not overbake! They are done when there is a slight crust on the top but your finger still makes an impression. Cool thoroughly on a rack, refrigerate, and cut into 9 or 16 squares.
