Sweet and Salty Fried Walnuts
- 3 cups walnuts
- Cornstarch; as needed
- Juice of 2 oranges
- 1/2 cup sugar
- 1/2 cup soy sauce
- 2 Tbsp black bean paste
- 2 Tbsp seasoned rice vinegar
- 1 hot chili pepper; minced
- 3-5 inches ginger; made into a paste
- 1 head garlic; made into a paste
- 2 bunches scallions; whites cut into thin circles, greens cut into 1/2 inch lengths
- 1 Tbsp cornstarch
- Peanut oil; as needed
In a small bowl, combine orange juice, sugar, soy, black bean paste, rice vinegar, chili and garlic. Set aside. Cover walnuts with water in a saucepan and bring to a boil. Boil for about 3 minutes and then strain. Fill a saute pan with about 1/2 inch of peanut oil and heat to medium high. Sprinkle nuts with cornstarch until well coated. Fry in oil for about 2 minutes until golden and crisp. Remove from pan and drain oil. In a saute pan add reserved soy mixture and bring to high heat. Whisk in cornstarch and add scallion greens. Cook until think and bubbly, stirring constantly. Once thick and saucy, add walnuts and toss well. Plate and top with white scallion bits.
