Tofu Breakfast Scramble

  • ¼ cup hot water
  • 1 Tbsp. miso paste
  • 1 Tbsp. soy sauce
  • ¼ tsp. turmeric
  • ¼ tsp. basil
  • ¼ tsp. dill
  • 1 red bell pepper; diced
  • 6 large mushrooms; thinly sliced
  • 1 small onion; minced
  • ¼ cup vegetable oil
  • 8 oz. firm tofu

This Asian inspired tofu breakfast scramble combines tender veggies and bold flavors for the perfect vegan breakfast!

In a small bowl, combine the water, miso, soy sauce, and spices. Set aside. In a medium sauté pan, cook the onions, peppers, and mushrooms in oil until soft and slightly browned. Crumble tofu into the pan and continue cooking. Stir frequently for about 5 minutes, or until the tofu starts to color. Pour the liquid mixture over the veggies and tofu and allow it to simmer for a few minutes. Taste and adjust seasoning with salt and pepper if needed.
