Very Veggie Lo Mein
- 3/4 lb. lo mein wheat noodles; cooked, drained, shocked, and oiled
- 1 tsp. sesame oil
- 1/4 cup hoisin sauce
- 2 Tbsp. soy sauce
- 2 Tbsp. sugar
- 1 tsp. salt
- 2 Tbsp. vegetable oil
- 2 large carrots; julienned
- 2 stalks celery; julienned
- 1 small red onion; thinly sliced
- 1 cup fresh snow peas or edamame
- 4 cloves garlic; chopped
- 2 Tbsp. fresh ginger; minced
- 4 scallions; sliced
- 3/4 cup fresh bean sprouts
- 3 Tbsp. fresh cilantro; chopped
- Vegetable Oil; as needed
- Sesame Seeds; for garnish
Veggies are the star in tasty lo mein!
In a small mixing bowl, combine together the sesame oil, hoisin sauce, soy sauce, sugar, and oil. Heat a large sauté pan or wok over high heat and add about a tablespoon of vegetable oil. Add in the carrots, celery, and onion and cook until slightly tender but still crunchy! Toss frequently to cook evenly, before adding the snow peas. Continue sautéing until the peas are tender, then add the garlic, ginger, and scallions. Pour in the sauce mixture, along with noodles and cook while tossing until the sauce has reduced and coated all of the noodles. Stir in the bean sprouts and cilantro and serve hot!
