Baba Ghanoush
- 1 large eggplant
- 1 whole lemon; juiced
- 1 TBSP sesame tahini (sesame paste)
- 4 large garlic cloves
- 2 TBSP olive oil (more if desired)
- Salt; to taste
- Liquid smoke; to taste
- Cup fresh parsley; chopped (optional)
Cut stem end off eggplant, pierce a few holes in it with a fork and bake in 350 degree oven for an hour. Remove from oven and let it cool for an hour. This makes it easier to remove from the skin. Cut in half and scoop all of the insides out from the skin and put in a bowl. Chop the garlic very fine in food processor, then add the eggplant, lemon juice and tahini and mix well until its all blended together. Blend in a little olive oil, Liquid Smoke and salt to taste. Put in a dish, cool, drizzle with a little more olive oil and top with parsley.
