Hearty Greens and Garlic Tofu Scramble

  • 1 cup of greens of your choice; cooked until tender
  • 1 cup medium firm tofu
  • 1/3 cup soy milk
  • 2 Tbsp nutritional yeast
  • 2 Tbsp tapioca flour
  • 1/4 tsp turmeric
  • 1/4 tsp cumin
  • 1/4 tsp chili powder
  • 1/2 tsp garlic
  • Salt & pepper to taste
  • 1 shallot; minced or sliced thin
  • 2 cloves garlic; minced

Combine all the ingredients in a blender until smooth. Heat a pan over medium heat with half a tsp of oil.  Add cooked greens to pan and hen scoop 1/4 C of batter into the pan. Let it cook on one side for 3 minutes ( the surface should have small bubbles), sprinkle with shallots and garlic and then flip, cooking for another 3 minutes.
