Pan Seared Pepper Crusted Mahi Mahi

  • 2 large Mahi Mahi filets; cut in half lengthwise
  • 4 Tbsp coarsely ground black pepper
  • 1 tsp coriander
  • 1/4 tsp paprika
  • 1 tsp ginger
  • 1/4 tsp cayenne
  • Salt; as desired
  • Vegetable oil; as needed

In a mall bowl combine all spices except for black pepper. Gently press rub mixture all over halved filets and then roll in ground pepper to coat. Heat a large frying pan to medium high heat until very hot. Add a tablespoon or two of oil and sear fish for one-two minutes per side until all sides are browned. Pull from pan, rest and slice into 1/4 inch thick pieces to serve.
