Watercress Super Salad


  • 2 tbs Dijon mustard
  • 3 tbs olive oil
  • 1/4 Cup fresh squeezed orange juice
  • 1 lime
  • 1TBS honey
  • salt and pepper to taste


  • 1/2 5oz package of watercress
  • 1 sliced avocado
  • 1 segmented blood orange
  • 1/4 Cup walnuts, chopped and lightly toasted
  • 1 small red onion

Combine Dijon, orange juice, lime juice, and honey, and whisk. Whisk in 3 Tbs olive oil, salt and pepper to taste, set aside.

Marinate 1/4 thinly sliced red onion in dressing for 10 minutes. Toss Watercress with desired amount of dressing and marinated onions, segmented blood oranges, and then plate. Fan 1/2 sliced avocado over the salad, top with drizzle of leftover salad dressing to taste, a pinch of salt, a grind of pepper, and toasted walnuts.
