Healthy Living Bakeshop’s Cranberry Bran Muffin
- 3/4 cup wheat bran
- 3/4 cup hot water
- 2 cups all purpose flour
- 3/4 cup sugar
- 1 1/2 tsp baking powder
- 3/4 tsp baking soda
- 1/4 tsp salt
- 2 tsp cocoa powder
- 1 1/2 tsp cinnamon
- 1/4 tsp allspice
- 1/8 tsp nutmeg
- 2 eggs
- 1 Tbsp molasses
- 1/2 cup canola oil
- 1/2 cup buttermilk
- 2 cups cranberries
Preheat oven to 350°F. In a large bowl combine bran and hot water and let sit until cooled to room temperature. In another bowl combine flour, sugar, baking powder, baking soda, salt, cocoa powder and spices. Add eggs, molasses, oil, and buttermilk to the cooled bran and combine well. Add the dry mix and stir just until combined. Divide the batter equally in a muffin tin. Top with cranberries and bake until the tops spring back when pressed gently in the center, about 20 minutes.
